Hautbois Champagne lies deep in the vines in Pévy, a lovely village on the Massif de St Thierry.
Sandrine and Fabien put their passion, expertise and determination into keeping the values passed down through 5 generations alive and current with sustainable and responsible vine growing (cover crops, tillage, yield management etc.) alongside the latest innovations.
The 8ha vineyard grows the 5 Champagne varieties (Meunier, Pinot Noir, Chardonnay, Arbane and Petit Meslieron) on the Pévy and Villiers-Franqueux terroirs.
This diversity of perfectly ripe grapes goes into a range of outstanding champagne that we would love to introduce and share with you.
We are committed to sustainable and HVE (high environmental value) vine growing. We take the utmost care over both our vines and our surroundings to help protect our land all year long.
We believe that champagne is about more than just making wine; it’s about hard work and taking care of the vines, land and people.
